Our Philosophy

The philosophy is focused on core ingredients and building a dish around the produce putting it into the center of the attention where they belong and celebrating their brilliance. Not only is it delivering a magical culinary experience, it may also bring some education on neglected or maybe never tasted before, or in this way.

The highlight of the menu is the Riflessi di Materia tasting menu, an unconventional menu that does not catalog a dinner into its classic order of courses, and instead revolutionises the act of eating.

 

The entire menu is all centered around carefully selected ingredients with one of them defining each dish even influencing the plate it will be served on. It is a perfect reflection of the purity of the produce, a celebration of versatility and a journey for all guests often connecting unexpected flavors – always authentic though – making them work creating an explosion for your senses. One product – one plate – one unique experience.

 

Be prepared to be taken on a journey in unexpected directions and the wine and drinks pairing will do the same for you.

 

A pairing with an accurate selection of Non-alcoholic wine is also available.

Unique Bread Pairing

To complete it all, Mario and team developed a unique approach to bread pairing for 5 out of the 7 dishes – a totally new experience all hand crafted in-house.

 

The pairing is designed to complete the dish and to celebrate one of the most important elements of our life; bread.

 

Five different types have been created using old ingredients in a modern way, leaning on the classics with a personal ADAGIO touch encompassing a range of flours, different processes and live yeasts, including a mother yeast of about 100 years old.

 

It is the purest reflection of our chef Mario and his vision of gourmet dining.
